Vegan Holiday

I am not vegan, but I find vegan recipes to be a lot of fun to make. I'm only a vegetarian, "vegans in the making", as the experienced vegan eaters call people like me.
This Christmas, or holiday season, try replacing your normal dishes for dinners with some new vegan ideas! Not only will you be saving the environment, or trying something new, but you'll also be a lot healthier!

1) Alicia Silverstone's "The Kind Life" Mac & Cheese
Using almost only soymilk, garlic, paprika, and elbow pasta for this, makes some pretty delicious macaroni and cheese.
Since I've met Alicia and I have her new book on a vegan lifestyle, I know (from experience) her recipes are good. So definitely try this!

2) Lentil Soup
This recipe is "ridiculously easy" and made with lots of yummy veggies!

3) Zucchini Alfredo
I plan on making this recipe within the next 24 hours. It looks heavenly.

4) Simple Blueberry Pancakes
The recipe list has less than a full paragraph for the instructions, then it has to be easy to make. Here is my breakfast tomorrow morning!
